UnMasc: How to Cook & Eat in Chinese
May 29th, 2012 by Student

Chinese takeout is a big part of being a Route One regular. Every weekend around 2 a.m., hoards of college kids craving orange chicken, beef and broccoli, and dumplings flock to Shanghai Cafe and Panda Express. But rumor has it that the Chinese food American college students know and love doesn’t actually resemble the authentic recipes prepared and eaten by people in China!
One of our books in Hornbake Library, titled How to Cook and Eat in Chinese by Buwei Yang Chao, dishes on some of the authentic Chinese recipes you won’t find in the Shanghai buffet line. For example, Chao doesn’t mention a recipe for orange chicken, but does highlight ingredients and directions for making Fried Spring Chicken, Bamboo Shreds, and Stir Chicken Shreds. The most interesting recipe I found was a dish called Stirred Dandelions, which calls for dandelions, lard or vegetable oil, salt, and sugar.
Of course, there were occasional similarities between what you find in an American Chinese restaurant and Chao’s recipes. For example, Chao provides recipes for American favorites such as Sour-Hot Soup, Spring Rolls, and Egg Rolls. Whether you want to impress your friends with a homemade, genuinely Chinese meal, or are simply curious aobut these interesting recipes, come into the Maryland Room at Hornbake Library and take a look at How to Cook and Eat in Chinese!
